Sichuan Pepper

Sichuan pepper is not a true pepper. It is the dried husk of the fruit of Zanthoxylum shrubs, a relative of the citrus family, and a defining spice of Sichuan cooking. On the tongue it produces a famous tingling, numbing sensation; in the nose it smells bright, lemony, woody and gently floral, with a peppery sparkle.

Perfumers use Sichuan pepper as an extract or CO2 extraction, or build its effect with materials that emphasise its citrus-zest and fresh-spicy facets. Compared with black pepper, it is lighter, more aromatic and more lemon-like, and compared with pink pepper it is less rosy and more green-woody.

In a fragrance it usually appears in the top notes, where it adds lift and a crackling freshness to the opening. It works especially well against heavy materials such as saffron, oud, leather and resins, cutting through their density so the composition feels alive rather than muddy. It can also sharpen fruity accords, giving ripe tropical notes a spicy edge.
